Peanut Butter No Bake Cookies

by Chris on September 6, 2013

Can you believe I’ve been blogging all these years, and this is my very first recipe? I think it says a lot about how I cook. :) It’s so good, perhaps it was worth the wait. My grandmother was the BEST baker I’ve ever known, and this is her recipe. I basically grew up on chocolate no-bakes, but this peanut butter version is a show-stopper. Everytime I bring them to a party, someone asks for the recipe. Sooooo it’s worthy of a post.

Peanut butter no bakes

Ingredients:

  • 1/4 Cup butter
  • 1/2 Cup milk
  • 2 Cups sugar

Bring ingredients to a boil over medium heat. Let it rolling boil for two minutes and remove from heat.

Rolling boil–No bakes

As soon as you remove from heat, add the following ingredients and stir until mixed well:

  • 3 Cups oatmeal (old fashion oats tend to be too big for this recipe, so I use 1-minute)
  • 1/2 Cup peanut butter
  • 1 Tsp. Vanilla

Cookie ingredients

Quickly spoon cookies onto foil or wax paper.

If done correctly, they set up within a couple of minutes. Boil too long? They come out too hard. Boil too short? You’ll be eating them with a spoon. Not that that’s a bad thing.

These are seriously a family favorite, and they are extremely easy to make!
