Well. Somehow my small Easter dinner of 8 went to 14 overnight. It’s not an issue–I love everyone to be together. The problem is what to cook and how to be efficient about it. Can I make some dishes ahead of time? Can I keep the cook time low? Can I just buy a bucket of chicken at KFC and call it good?
I host Thanksgiving every year, and the menu seems to be easier for me. Easter, however, requires a “lighter” menu (doesn’t it?), so I switched gears just a bit. I turned to the inspiration behind Pinterest to find some new recipes for our meal. In addition to some steadfast family recipes including coleslaw, broccoli salad, deviled eggs, rolls, etc., here’s what I’ll be cooking for dinner!
