Colorful & Fun Summertime Entertaining

June 19, 2013 by Chris

As I said earlier, I’m playing the tourist right now in Europe. Thankfully, I have some wonderful and equally talented blog friends who are here to share some things with you. My first friend is one of my favorite people! She’s gorgeous (read: I’m the ugly friend in this relationship) and extremely funny. And let’s not forget the girl knows her way with decorating! Take it away, Courtney! a thoughtful place

Hi Just a Girl Readers! I can’t tell you how excited I am to be here. Back in the day, this blog was the very first one I read! So to be here sharing a few ideas is beyond fun for me. Over at A Thoughtful Place, I dish up a good number of entertaining ideas. When I am not obsessing over organizing or decorating, I love to host family and friends. I am a huge believer that you can host a great party without it being super stressful. Today I am sharing some fun and colorful ways to entertain this summer.

I am all about embracing the beautiful colors of summer. In fact the vegetables and fruits that can be found this time of year are a beautiful way to infuse color on your table or buffet. Recently, for a graduation party, I made this vegetable dip and it is now my favorite one ever. Very easy to make and tastes scrumptious with fresh veggies, pita chips, or any other crunchy snack you might crave.

I stumbled upon this recipe over at the Food Network thanks to Food Network Magazine.
Ingredients:

2 cups baby arugula

1 celery stalk, cut into thirds
&nbsp

1 small carrot, cut into thirds

4 scallions, cut into thirds

1 small clove garlic

1 Tbsp chopped fresh dill {or basil or tarragon}

1 cup sour cream

1/2 cup mayonnaise

4 oz cream cheese

2 cups vegetable chips, finely crushed

Kosher salt and freshly ground pepper

Raw vegetables for serving

What to Do:

Combine the arugula, celery, carrot, scallions, garlic and dill in a food processor and pulse until very finely chopped.

Add sour cream, mayonnaise and cream cheese. Pulse to combine. Add the crushed chips and pulse a few more times until smooth. Season with salt and pepper. Transfer to a bowl and chill 30 minutes or up to 8 hours. Serve with fresh veggies.

I think a healthy does of color goes a long way when entertaining in the summer months. Let a signature drink or dessert add a splash of color. Even your table decor can get kicked up a notch. Embrace the sun and all of the fun colors this time of year. I love to decorate with fresh fruit or use it for a fun dessert.

Here is a simple sorbet dessert served up in a hallowed out lemon. Really easy to do but makes a fun and fresh impression

I also love to combine colorful patterns when entertaining. It creates a really fun table and doesn’t take much effort to pull out your various patterned linens and combine them on the table.

To see more entertaining ideas you can head over to A Thoughtful Place and click on the “entertaining” tab under my header. Wishing you all a really fun filled summer with friends and family. It’s always nice to simmer down a bit and really savor the warm months and longer nights. And thank you to Chris for letting me hang out here today! SO much fun.
